Bollinger Looks to the Future with Fortune

Fortune editor Rachel King shared Champagne Bollinger’s plans to enhance their property in Ay with a hospitality center and hotel at the winery. The existing cellar will be expanded to accommodate more tastings and intimate dinners, while installing floor to ceiling windows will elevate the space. The cellar will feature a cathedral-like opening to the vineyards, holding more than 5000 barrels. Maison Dueil, part of the Bollinger estate will be transformed into a 20-bedroom luxury hotel, complete with wellness center, a pool, meeting rooms, a reception room, and a dining room opening out to the garden. Bollinger also has big plans for sustainability improvements, such as converting to 100% recycled and recyclable glass bottles. Construction on the hotel started in 2022 and is expected to be completed by 2026.
